Swiss Chard Rice with Carrots

An easy upgrade to plain rice that makes for a really interesting complimentary dish, or even a main course with a side salad.


  • 1 cup Basmati Rice
  • 1 cup chopped chard leaves
  • 1.5 cup water
  • 2 tbsp oil
  • 4 ground cloves
  • 1/8 tsp cinnamon
  • 1 small onion
  • 4 large garlic cloves


Wash and soak rice. Drain & set aside.

Place chard leaves in a small, dry skillet. Stir over medium heat until wilted. Transfer into a blender with 1/2 cup water. Blend until smoothly pureed. Set aside.

Heat 1 tbsp oil in large saucepan over medium heat. Add cloves and cinnamon. Stir until aromatic, appx 30 seconds. Add carrots and rice; stir-fry 4-5 minutes. Add the chard puree, salt, and 1 cup of water. Bring to a boil, then cover and simmer over low heat until rice is tender, appx 15 minutes.

While rice is cooking, fry the onion & garlic in the remaining tbsp of oil until browned. Set aside.

Remove rice from heat, let cool 5 minutes, then fluff & transfer to a serving dish. Garner with onion & garlic.
